Abstract

Woody Breast (WB) and Spaghetti Meat (SM) myopathies significantly impact poultry meat quality, yet current detection methods rely either on subjective manual evaluation or costly laboratory-grade imaging systems. We address the problem of low-cost, non-destructive multi-class myopathy classification using consumer smartphones. MyoVision is introduced as a mobile transillumination imaging framework in which 14-bit RAW images are captured and structural texture descriptors indicative of internal tissue abnormalities are extracted. To classify three categories (Normal, Woody Breast, Spaghetti Meat), we propose a NEATBoost-Attention Ensemble model, which is a neuroevolution-optimized weighted fusion of LightGBM and attention-based MLP models. Hyperparameters are automatically discovered using NeuroEvolution of Augmenting Topologies (NEAT), eliminating manual tuning and enabling architecture diversity for small tabular datasets. On a dataset of 336 fillets collected from a commercial processing facility, our method achieves 82.4% test accuracy (F1 = 0.83), outperforming conventional machine learning and deep learning baselines and matching performance reported by hyperspectral imaging systems costing orders of magnitude more. Beyond classification performance, MyoVision establishes a reproducible mobile RGB-D acquisition pipeline for multimodal meat quality research, demonstrating that consumer-grade imaging can support scalable internal tissue assessment.

Deep Learning-Based Meat Freshness Detection with Segmentation and OOD-Aware Classification

In this study, we present a meat freshness classification framework from Red-Green-Blue (RGB) images that supports both packaged and unpackaged meat datasets. The system classifies four in-distribution (ID) meat classes and uses an out-of-distribution (OOD)-aware abstention mechanism that flags low-confidence samples as No Result. The pipeline combines U-Net-based segmentation with deep feature classifiers. Segmentation is used as a preprocessing step to isolate the meat region and reduce background, producing more consistent inputs for classification. The segmentation module achieved an Intersection over Union (IoU) of 75% and a Dice coefficient of 82%, producing standardized inputs for the classification stage. For classification, we benchmark five backbones: Residual Network-50 (ResNet-50), Vision Transformer-Base/16 (ViT-B/16), Swin Transformer-Tiny (Swin-T), EfficientNet-B0, and MobileNetV3-Small. We use nested 5x3 cross-validation (CV) for model selection and hyperparameter tuning. On the held-out ID test set, EfficientNet-B0 achieves the highest accuracy (98.10%), followed by ResNet-50 and MobileNetV3-Small (both 97.63%) and Swin-T (97.51%), while ViT-B/16 is lower (94.42%). We additionally evaluate OOD scoring and thresholding using standard OOD metrics and sensitivity analysis over the abstention threshold. Finally, we report on-device latency using TensorFlow Lite (TFLite) on a smartphone, highlighting practical accuracy-latency trade-offs for future deployment.

Simulation-Based Multi-Fillet Evaluation of Woody Breast Poultry Fillets

Woody breast (WB) is a myopathy in modern broiler chickens that causes the breast muscle to become unusually stiff and fibrous, leading to decreased meat quality and significant economic losses. State-of-the-art automated WB detection relies on a side-view imaging system to analyze the bending behavior of a single fillet as it falls off a conveyor belt. While highly accurate, this approach is constrained by its single-fillet field of view, creating throughput bottlenecks on commercial processing lines. In this paper, we address this limitation via a novel multi-fillet detection architecture utilizing a top-down camera configuration. To validate our approach, we first develop a high-fidelity digital twin of an industrial conveyor system. Next, we synthesize a diverse dataset of 3D fillet meshes and model their viscoelastic bending dynamics using a physics-based simulation engine. Lastly, a continuous 2D shape deformation score is extracted from the top-down perspective as the simulated fillets traverse the roller precipice. Experimental results demonstrate that the top-down shape score effectively captures the contour changes of the fillets as it bends, providing a robust and scalable alternative to a side-view imaging system for simultaneous multi-fillet WB evaluation.

MobileMold: A Smartphone-Based Microscopy Dataset for Food Mold Detection

Smartphone clip-on microscopes turn everyday devices into low-cost, portable imaging systems that can even reveal fungal structures at the microscopic level, enabling mold inspection beyond unaided visual checks. In this paper, we introduce MobileMold, an open smartphone-based microscopy dataset for food mold detection and food classification. MobileMold contains 4,941 handheld microscopy images spanning 11 food types, 4 smartphones, 3 microscopes, and diverse real-world conditions. Beyond the dataset release, we establish baselines for (i) mold detection and (ii) food-type classification, including a multi-task setting that predicts both attributes. Across multiple pretrained deep learning architectures and augmentation strategies, we obtain near-ceiling performance (accuracy = 0.9954, F1 = 0.9954, MCC = 0.9907), validating the utility of our dataset for detecting food spoilage. To increase transparency, we complement our evaluation with saliency-based visual explanations highlighting mold regions associated with the model's predictions. MobileMold aims to contribute to research on accessible food-safety sensing, mobile imaging, and exploring the potential of smartphones enhanced with attachments.
